Ingredients

Makes 4 servings

For the fruit: 

2 ripe peaches, sliced

½ cup- ¾ cup blackberries, depending on their size

2 tablespoons mint chiffonade

 

For the yogurt sauce:

 

1 cup full fat Greek yogurt

Juice of ½ a lemon

½ tablespoon raw honey

¼ teaspoon cardamom

½ teaspoon cinnamon 

 

⅓ cup chopped pistachios 

 

Directions

  1. In a medium bowl, combine the fruit and mint, saving a little bit for a garnish.

  2. In a small bowl, combine all of the ingredients for the yogurt sauce. 

  3. Distribute the fruit between 4 parfait cups or small bowls. 

  4. Top with chopped pistachios and remaining mint.
