CHOPPED SALAD

This recipe is really kind of a choose your own adventure! Feel free to omit anything you don't like or add anything you feel is missing. This salad makes a satisfying lunch and would be a great dinner for when the weather gets too hot to cook. You could add a little grilled salmon or chicken for extra protein, or some nitrate free turkey. 

 

Ingredients

For the dressing

1 clove garlic, minced

3 tablespoons apple cider vinegar

1 teaspoon dijon mustard

Pinch of salt

Two grinds fresh ground pepper

¼ cup EVOO

 

For the salad

Chopped:

Romaine, 4 cups

1 carrot

1 stalk of celery

Tomatoes, ½ cup

Red onion, ¼ cup 

½ of an avocado

2 hard boiled eggs

Pepperoncinis, ¼ cup

 

Sprinkle in:

2 tablespoons sunflower seeds

 

Directions

 

  1. In a small bowl, mix together the garlic, vinegar, mustard, salt and pepper. Slowly whisk in the olive oil (this helps it to emulsify). 

  2. Combine salad ingredients in a large bowl. 

  3. Toss with the salad dressing.
