VEGAN GREEN GODDESS DRESSING
Green goddess dressing typically has mayonnaise or sour cream in it. I love this one because even though it’s plant-based, it feels indulgent and it’s super satisfying. It's delicious on a chopped salad!
1 small shallot, roughly chopped
½ cup of loosely packed parsley
¼ cup roughly chopped chives
2 tablespoons tarragon
1 tablespoon lemon juice
2 tablespoons apple cider vinegar
¼ cup olive oil
1-2 tablespoons of water, depending on your thickness preference
⅛ teaspoon pink himalayan salt (regular kosher salt works too!)
3 grinds of fresh black pepper
Combine ingredients in a small bowl, starting with just one tablespoon of water.
Using an immersion blender, blend ingredients until smooth. Add another tablespoon of water if you want a thinner consistency.
