OLIVE OIL GRANOLA
This granola is only slightly sweet, which is what I love about it. The cinnamon and cardamom have anti-oxidant and anti-inflammatory properties. The oats can help with blood sugar balance and are packed with fiber. Add some nuts and seeds and, along with your olive oil, you have your healthy fats.
Ingredients

2 ½ cups of rolled oats (make sure they're gluten free if you have Celiac’s or a sensitivity!)

¾ cup pure maple syrup

½ cup extra virgin olive oil

1 teaspoon kosher salt

½ teaspoon ground cinnamon

½ teaspoon ground cardamom

Directions

Preheat the oven to 300.

In a large bowl, whisk together all ingredients except the oats.

Mix in the oats until well coated.

Spread mixture on a rimmed baking sheet in an even layer and bake for 40 minutes, stirring every 10 minutes, until golden brown and well toasted.
I like mixing in some hemps seeds and whatever nuts I have on hand at the end. Serve with some berries and yogurt or nut milk and you have yourself a satisfying breakfast or snack!
